This week, I have 2 more meal ideas for you – a simple Bolognaise recipe with steamed veggies and a yummy sweet “dessert” without the guilt! Mince Bolognaise Ingredients: 1kg extra lean beef mincen1 brown onionn750g pasta saucen1 tbsp mixed herbsnSalt and pepper to seasonnMethod: Chop onion into small pieces. Place mince and onion into a large fry pan. Cook until they havenbrowned. Add pasta sauce and herbs.nStir through until the pasta sauce has soaked into the meat.nSeason with salt and pepper. Enjoy with vegetables (see below), or add some pasta tonit – great for post-workout recovery food! Steamed Veggies This is all pretty straightforward! Ingredients are 2 cups broccoli, 2 x cups cauliflower, 1/2 butternutnpumpkin, 2 carrots and 2 zucchini – all chopped. Alternatively, use frozen veggies – they are just as good for you! Place them all into a microwave-safe dish and mix through any flavournyou like – I like to add a dallop of sweet chilli sauce and 1 tsp mincedngarlic. But, you could also add some sesame oil, soy sauce or just some goodnold salt and pepper. Microwave them for 5 minutes initially, checking to see if the veggies arensoft. Put them on a little longer should they need it.nDespite what you may have heard, microwaves aren’t actually that bad!nThere’s no solid research to suggest they diminish the quality of your food, sonmicrowave away I say! Dessert Recipe: A Sweet Treat, without the guilt Ingredients: Fruit of your choice: Grapes, stone fruit, watermelon, oranges, apples,nstrawberries – whatever is in season. A few dollops of low-fat natural yoghurtn1 tsp honey Vanilla essencenMethod: Have the fruit pre-chopped (make a big batch of fruit salad and store itnin the fridge. To prevent the fruit from going brown, sprinkle some lemon juicenover the top)nPlace your serving of fruit in a bowlnTop with yoghurt, 1 tsp honey and a few drops of vanilla essence This dish always helps to relieve any sweet cravings I may have had! The sweetness of the fruit is boosted by the flavour of the honey and vanilla essence.
