Ever get a craving for garlic bread?nWell, over the weekend, I had one. It was cool and a little rainy, and I just felt like some tasty, crusty, warm, garlic bread. So I went searching for an alternative, because while I felt like the taste of the garlic bread, I didn’t feel like the oil and fat of the traditional stuff. And I’m happy to say that I found something that tastes great but is also guilt-free! Here’s my recipe for cauliflower garlic bread! Cauliflower Garlic Bread Ingredients: 3 cups cauliflower florets, choppedn50g light mozzarella cheesen3 garlic cloves, crushedn2 eggsn2 tbsp. flat leaf parsley Method: Using a food processor, chop the cauliflower into fine rice-sized pieces. Place cauliflower into a microwave safe container and microwave (covered) for 7 minutes. Cool slightly. Preheat oven to 220 degrees and line a baking tray with baking paper. In a bowl, combine the eggs, cheese, garlic and parsley. Add cauliflower and stir to combine. Spoon the mixture onto the baking tray and flatten it out. Bake for 25 minutes or until golden brown.
