Foodie Friday: Healthy Nachos
I don’t know about you, but I love a good nacho dish! This week’s recipe is a bit more of a healthy version to the traditional nachos, so enjoy – guilt-free! Ingredients: Canola oiln8 wholegrain tortillas, cut into trianglesn1 brown onion, finely dicedn1 garlic clove, crushedn2 tomatoes, finely choppedn500g beef mincen1 tablespoon ground cuminn2 tablespoons ground coriandern1/2 teaspoon ground chillin1/2 cup coriandern400g can kidney beansn2 tablespoons tomato pasten1 tablespoon lime juicen1/2 cup no-fat Greek yoghurt Method: Preheat oven to 200 degrees. Arrange tortillas in a single layer on trays. Lightly spray with canola oil. Bake for 5 minutes or until slightly brown.nIn a pan, place beef mince and onion and cook until meat is brown. Add cumin, ground coriander, chilli, beans and tomato paste and stir for a few minutes until combined. Mix garlic, yoghurt, and lime juice in a bowl. In a separate bowl, combine coriander and tomato. To serve: arrange the pieces of tortilla on a plate. Add beef mixture.
