So, there was some raisin bread on special last week and I thought I’d grab some for Isabella.nWe never have bread in our house, so I thought it might be nice for her to try. She finished the loaf within 2 days (with some help from her Mummy and Daddy – this is why we don’t have bread in the house!) and so it’s safe to say she liked it. I bought some more today, and wanted to change up what I had been putting on it, which was mainly banana and/or honey. And I remembered back to my childhood and how much I LOVED having toast and jam! The only thing is, store-bought jam has so much refined sugar in it, and it’s not something I really want Isabella to have on a regular basis. So, I made my own. I got some ideas from a few different recipes online and tweaked them to suit what I have easy access to.nAnd this is the end result:nHOMEMADE STRAWBERRY JAMnIngredients: – 60ml coconut watern- 350g strawberries, green bits chopped offn- 2 tbsp. flaxseed meal (can also use 2 tbsp. chia seeds, but flaxseed meal is so much cheaper!)n- 86g dates, chopped Method: – Add coconut water and dates to food processor and mix for 30 seconds.n- Add half the strawberries and all the flax meal. Pulse a few times to break up the fruit. – Add the other half of the fruit and mix for a few seconds to get a nice thick consistency. – Place in the fridge to chill for 30 minutes. If the jam isn’t sweet enough, you can add a little bit of honey – but not too much, as it will make the mixture too runny. I’m looking forward to experimenting with different fruits!
