New Recipe: Easy to Make Energy Balls
I realized this week that I’m turning into my mother. I watched as my little girl tucked into every other child’s food at our Mums n Bubs class, because it looked way more exciting than the boring fruit I had packed her. And I had flashbacks of my own childhood – the number of times I rolled my eyes as I opened my lunchbox to find “boring old fruit!” (Such a tough life!) So this week I decided to be a little more proactive, and we whipped up some energy balls at home. Great for the kids, and you only need one at a time – they’re super rich, and fairly calorie dense, too. Ingredients: 1.5 cups rolled oats 2 tbsp cocoan1/2 tsp cinnamon 1 tbsp chia seedsn1/2 cup peanut butter (smooth)n3 tbsp honeyn1/3 cup sultanas 1 tsp vanilla extractn3-4 tbsp water Method: Add all dry ingredients, except for sultanas, into a bowl and mix.nAdd peanut butter, honey and vanilla and stir to combine.nStir in sultanas.nAdd water and mix.nRoll into balls using your hands. (Tip: have your hands slightly wet so that the mixture doesn’t stick to them).nPop them in the fridge for an hour and enjoy
