I love a good stir fry. They’re always quick to prepare and you can pretty much throw in any meat, veggies and flavours you like. We just so happened to have some peanut butter (very rare!) in the cupboard, so I thought I’d try a beef satay recipe.nAnd here it is… Ingredients: 500g diced beefn1 x brown onion, choppedn2 x carrots, choppedn100g green beans, choppedn1 head of broccoli, choppedn100g pumpkin, chopped and pre-steamed in the microwave so it’s cookednHandful of spring onion, choppednHandful of snow peas, choppedn2 tbsp. peanut buttern1 tbsp. sweet chilli saucen2 tbsp. soy sauce 1 tsp minced gingern1 tsp minced garlicn1 tsp ground cuminnMethod: Heat a fry pan and place beef and brown onion in it. Cook until beef is browned. Combine peanut butter, sweet chilli sauce, soy sauce, ginger, garlic and cumin in a bowl. Add to fry pan, stirring it through until the beef and onion are covered. Add all veggies and stir through, cooking for a few minutes until veggies are cooked. Enjoy!
