Most weeks, I’ll whip up a quiche to have in the fridge ready to go for brekky throughout the week. It saves time on those cold winter mornings! And I know I’m starting my day right by fuelling my body with protein and veggies. Here’s the recipe for Pastry-Free Roasted Vegetable Quiche Ingredients:n2 eggsn2 cups egg whites (we get the frozen egg whites from Coles/Woolworths)n1 x red onion, dicedn300g Kent pumpkin, chopped into cubesn1 x red capsicum, diced 30g low fat feta, diced or crumbled 1/2 cup spring onion, finely choppednSalt and pepper 1 tbsp olive oil Method:nPreheat oven to 200 degrees C or 390 degrees FnPlace all vegetables into a baking dishnDrizzle olive oil over veggies and toss to ensure all veggies are covered Sprinkle with salt and peppernRoast in the oven for 15 minutes Combine eggs and egg whites in a blender/Magic Bullet and pour over the veggies.nAdd feta and spring onion.
