Don’t ask me why, but this week, I just felt like baking! (It’s always dangerous…)nI had some overripe bananas, so went searching online for a banana bread recipe that I could tweak and make my own. And I found one! It’s free from flour, butter and sugar – and it still tastes great!nHere’s my recipe for Healthy Banana Bread. Ingredients: 3 x ripe bananasn3 x cups oatsn3 x eggsn1/3 cup coconut oiln1 tsp baking powdern1 tsp saltn3 tbsp. cinnamonn2 tbsp. honeyn1/4 cup walnuts, chopped Method: Preheat oven to 180 degrees. In a large bowl, mash the bananas. Add in the eggs and oil, mixing thoroughly. Stir in the oats, baking powder, salt, cinnamon, honey and walnuts. Mix thoroughly. Pour into a bread loaf pan. Bake for 20-30 minutes or until a toothpick comes out clean. Enjoy!
